Farm History:

Cafe Pacas is one of El Salvador's most renowned coffee families, now in its fifth generation. Since 1991 the family has operated both specialty and commercial coffee businesses. The Pacas family split into two branches run by siblings, founding the Cafe Pacas and Cafe Tuxpal brands respectively. Cafe Pacas continues the Maria family's pursuit of high-quality emerging coffee varieties, remaining a small but highly efficient, tightly-knit operation - a family-run model that is rare among El Salvador's coffee farms. The Pacamara variety itself originated in 1958 when the Salvadoran Institute for Coffee Research (ISIC) crossed Pacas with Maragogipe, taking roughly 30 years of selection before being released to farmers in the late 1980s, giving rise to its name "Paca-Mara."

Process Story:

Natural processing dries the whole coffee cherry with its skin intact, allowing the beans to continuously absorb sugars and flavor compounds from the fruit during drying. This creates a rich, layered fruit sweetness and vibrant acidity. This Pacamara natural lot develops lively strawberry and berry-like acidity, layered with sweet orange, apricot and pomelo aromatics, showcasing the bold, complex character unique to the Pacamara variety.
